This makes the best tasting salsa ever. I did reduce the amount of jalapeno peppers. I only add 3/4 cup of jalapeno peppers. Yummy! I would describe this salsa as sweet and spicy!
Wonderful Salsa
8 cups tomatoes, chopped
2 1/2 cups chopped onions
1 1/2 cups green peppers
1 cup chopped Jalapeno peppers, more if want hotter
6 cloves garlic, minced
2 teaspoons cumin
2 teaspoons black pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup vinegar
1 (15 ounce) can tomato sauce or tomato juice
1 (12 ounce) can tomato paste
Mix all together and bring to a slow boil for 10-15 minutes. Ladle into sterile jars leaving 1/2 headspace. Wipe rims and place on lids. Place in water bath and process for 10 minutes, adjusting for you altitude. This is a medium salsa. This is also a chunky salsa, so if you want a smoother salsa cut your vegetables into smaller pieces. Makes approx. 3 Quarts or 6 pints.

I am so afraid of canning but I would love to try this! My father warned me once of the possibility of botulism, etc. and from that point on have been to timid to try!!! Thanks for stopping by my new blog by the way! I am having so much fun making PW's recipes, they are not healthy but it is okay to splurge now and again!
Lara, silly question - what is canning salt? do you use the pressure cooker thing or just a regular pot? See, you have me intrigued!
Canning salt can be purchased at walmart. It's right next to the kosher salt. It comes in a big green box. Also, for salsa all you need is a water bath. You put the jars in it and boil them for 15-20 minutes. You will need a jar lifter as well. You can check walmart in the canning section for both items. My hubby works at walmart headquarters. So, I always say "shop walmart"! Good Luck!
