Chicken Piccata Pasta Toss

Seriously, the best meal ever!!!!!
Chicken Piccata Pasta Toss

  • 12 oz penne pasta, cooked according to package instructions
  • 1 1/4 lb boneless chicken breast, cut into 1 inch pieces
  • 2 tbsp olive oil, divided
  • 2 tbsp butter, divided
  • 2 shallots, chopped (I used red onions)
  • 4 cloves garlic, minced
  • 2 tbsp flour
  • 1/2 cup white wine (I omitted)
  • 1 cup chicken stock (I added 1 1/2 cups of chicken broth
  • juice of one lemon
  • 1 cup Parmesan Cheese ( after making the sause, I added 1/2 c of parmesan cheese and I added another 1/2 c on top of the dish)
  • 2 tbsp capers (I omitted)
  • 1/4 cup parsley, chopped
  • salt and pepper
